1. In a large mixing bowl, beat 2 large eggs and 4 large egg yolks with 252g granulated sugar.
2. Add 652mL heavy whipping cream and 296mL milk, plus 1 tsp vanilla and a pinch of salt. Pour 1118mL mixture into crème brulee dishes.
3. Place in baking pan that is filled with hot water - at least up to the middle of the dish. Chill.
4. Place about 1/2 tsp light brown sugar over top. Bake until sugar caramelizes.
