Mini Peach Pies

Ingredients
- Peaches, peeled and cut into ½” (1.3 cm) pieces
- Sugar –divided into 1/3 cup (67 g) and 1 tbsp. (13g)
- Cornstarch –2 tbsp. (16g)
- Ground ginger –1 tsp. (2g)
- Lemon juice –1 tsp. (5mL)
- Refrigerated pie crusts –1 package
- Egg white –1 ea. , beaten with 1 tbsp. (5 mL) water
Steps

Step 1
Preheat oven to 400°F (200°C).

Step 2
Mix peaches, sugar, cornstarch, ginger, and lemon juice.

Cut 8, 3.5" (9cm) rounds from crust dough.

Step 4
Add 1 tbsp filling to each bottom round, top with another, and seal edges.

Step 5
Brush with egg wash and sprinkle with sugar.

Step 6
Place 4 pies on greased TB10S tray.
