Fruitcake

Ingredients

  • 2 cups dried fruits (raisins, golden raisins, currants)
  • 1 ½ cups candied cherries, halved
  • 1 cup candied pineapple, diced
  • 1 cup toasted pecans or walnuts
  • 1 cup sugar
  • ½ cup unsalted butter, room temperature
  • 1 ½ cup molasses
  • 3 large eggs, room temperature
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp allspice
  • ½ cup orange juice
  • Optional: zest of 1 orange

Steps

  • Step 1

    Prep Fruit: Combine dried fruit, cherries, and pineapple. Optional: soak in orange juice 30–60 minutes.

  • Step 2

    Preheat Oven: Set JET to 325°F (163°C).

  • Step 3

    Mix Batter: Mix butter, sugar, and molasses. Add eggs one at a time, then orange zest if desired.

  • Step 4

    Add Dry Ingredients: Mix dry ingredients and add to batter, alternating with orange juice.

  • Step 5

    Stir in fruit and nuts until evenly combined.

  • Step 6

    Prepare Pan: Grease and flour 2 8-inch loaf pans; pour in batter and smooth top.

  • Step 7

    Bake for 8 minutes on 40% power, checking early. Cake is done when a toothpick comes out clean.
