Ingredients
- 6 lobster tails
Steps

Step 1
Cut top of lobster tail to tail end with shears.

Flip over and cut bottom of tail to end.

Step 3
Take lobster meat out of shell with gloved hands.

Step 4
Set lobster meat on top of empty shell.

Step 5
Set lobster tails in a 4" amber pan.

Step 6
Add 1/2 cup (2oz.) of water to corner of pan.

Step 7
Cover and place in AMSO.

Step 8
Cook at the recommended settings.

Step 9
After cycle ends, let sit for 1 minute.

Step 10
Make sure internal temperature is at least 145°F (63°C).
Chef's Notes
White wine and other aromatics can also be added to the pan before steaming - we suggest using the drain shelf in this application.
