Mini Peach Pies

Ingredients

  • Peaches, peeled and cut into ½” (1.3 cm) pieces
  • Sugar –divided into 1/3 cup (67 g) and 1 tbsp. (13g)
  • Cornstarch –2 tbsp. (16g)
  • Ground ginger –1 tsp. (2g)
  • Lemon juice –1 tsp. (5mL)
  • Refrigerated pie crusts –1 package
  • Egg white –1 ea. , beaten with 1 tbsp. (5 mL) water

Steps

  • Step 1

    Preheat oven to 400°F (200°C).

  • Step 2

    Mix peaches, sugar, cornstarch, ginger, and lemon juice.

  • Step 3

    Cut 8, 3.5" (9cm) rounds from crust dough.

  • Step 4

    Add 1 tbsp filling to each bottom round, top with another, and seal edges.

  • Step 5

    Brush with egg wash and sprinkle with sugar.

  • Step 6

    Place 4 pies on greased TB10S tray.

    Bake in MRX. Cool 10 mins before serving — filling will be hot!
